Grilled meats and processed meats
The bad guys are called HAs – heterocyclic amines (common in those well-done meats and processed meats).
- Intake of foods rich in HAs varies by racial/ethnic groups-
- Highest in African Americans
- Intermediate consumption in Caucasians
- Lowest consumption in Latinos and Asians
- HAs are also found in processed meats (bacon, pork, ham, sausage, luncheon meats)
- Consumption of these products is 1.5 to 3X higher consumption in African Americans than in Caucasians and Asians
